Beef Shin is prepared from the bottom portion of the front or rear leg. As it comes from a working muscle it contains a high amount of connective tissue, this tissue breaks down when prepared using slow moist cooking methods such as casseroles and braising. These impart a rich, full bodied flavour and melt in your mouth texture. Winter soups are reliant on this cut to enhance the flavour. Coarse grain and very glutinous, slow cooked this meat falls of the bone and can be shredded through a soup. Adds a complex flavour when paired with our bacon hocks when used in making a pea and ham soup. Intensifies the flavour of any casserole. Great in a pressure cooker. This cut is perfect for making a 'Ragu'. It makes a lovely rich, flavorsome sauce with a lot of texture, perfect to add to parpadelle pasta. potato or kumara mash or as a pie filling.
